Gem lettuce, also known as baby gem lettuce or sucrine, is a leafy vegetable in the daisy family that is closely related to celtuce and sword lettuce. Although it is not a hybrid of the two, it is often described as a cross between romaine lettuce and butter lettuce: gem lettuce is sweet, crisp, and wonderfully tender with a refreshing flavor. Gem lettuce has a petite size that make it perfect for a single serving. Tanimura & Antle Artisan lettuce contains a mix of both red and green baby gem lettuce.

 

Uses: Gem lettuce, similar to romaine lettuce, is quite tolerant of heat. It is delicious lightly charred over a hot grill or cast iron pan.
